1 1/4 cups all-purpose flour
1 t. baking soda
1 t. cinnamon
1/2 t. nutmeg
1/2 t. kosher salt
1/4 t. ground ginger
1/4 c. unsalted butter at room temperature
1/4 c. grape seed oil ( can use vegetable or avocado oil)
1/2 c. granulated sugar
1/2 c. brown sugar
2 eggs
1/3 c. buttermilk, shaken
1 1/4 c. grated carrots
1 c. roughly chopped walnuts

Frosting:
6 T. unsalted butter cubed
5 oz. cream cheese at room temperature
1/2 t. vanilla
Pinch of salt
1 1/2 c. + 6 T. powdered sugar (divided)
2 t. heavy cream
Orange and green food coloring

Directions:
Directions:
Preheat oven to 350. Grease an 8 by 8 baking pan and line pan with parchment paper. Whisk together flour, baking soda, cinnamon, nutmeg, salt and ginger. In Kitchen Aid mixer, mix butter, oil and sugars (white and brown) with paddle attachment until fluffy (about 2 to 3 minutes). Then add eggs and beat until combined. Alternate between adding the buttermilk and dry mix to butter mixture until combined. Add carrots and walnuts last. Bake for 30 to 45 minutes or until toothpick comes out clean. Set on cooling rack and in fridge.

Brown cubed butter in saucepan and then pour in freezer-safe bowl.
Stir to cool down. Transfer to freezer to chill for 10 minutes until room temperature. Then add room temperature browned butter and cream cheese to stand-up mixer and beat until smooth. Sift in 1/12 cups powdered sugar and add vanilla, salt and heavy cream. Beat for 3 minutes. If you want to decorate separate 4 T. frosting into two bowls and use to make green and orange frosting.(using 2 drops of each color). Add 3 tablespoons of powdered sugar to each bowl and mix. Add colored frosting to piping bags ( can use Ziplock bags) to decorate. ) Spread frosting on cake and then pipe miniature carrots all over cake if desired.
