For Cake:
1 box French Vanilla or Vanilla Butter Cake mix
Jar of maraschino cherries - Use cherry juice to replace water in the recipe. Add
water if necessary to get 1C
1/3 cup vegetable oil
3 eggs
For Frosting:
1 box (3.4 oz) instant pistachio pudding mix
Regular size container of Cool Whip
1 C cold milk
1/4c powdered sugar
Can of chocolate fudge frosting

Directions:
Directions:
Preheat oven to 350°F. Grease and lightly flour two 8x8 pans, or use baking spray. In
a large bowl, follow instructions on box to mix cake. Mince cherries and add to batter. Bake for 26-31 minutes till a toothpick inserted near the center comes out clean. Let cool in pans for 15 minutes. Invert onto wire rack and let cool completely. Frost chocolate onto top of one cake (for filling). Place second cake on top of frosted cake.
Frosting: Beat pistachio pudding and milk, add powdered sugar and fold in Cool Whip and cover stacked layers.
