1 med. cucumber (remove the peel and cut into wedge remove the seeds)
1 Tbsp. salt
1 fresh clove garlic, minced
1 Tbsp. baby spinach
2 Tbsp. fresh garlic minced
2 Tbsp. fresh dill minced (substitute 1/2 tsp. Better than Bouillon Roasted Garlic)
1 cup plain Greek Yogurt (do not substitute)
Salt to taste

Place all ingredients into a glass container and zap once or twice with an immersion
blender. Chill for at least 2 hours before serving - overnight will be better.

Greek tzatziki sauce (zat zee key) is great on sandwiches in place of ranch dressing or mayonnaise. It is also used as a marinade for meats to go into wraps. Try it on tortilla and pita breads. Spread a small amount the bread and then again on the salad portion of your sandwich as you build it.

Try it as a salad dressing, marinade beef or chicken (be sure to dispose of used marinade); sauce on scrambled eggs, general sandwich spread to add kick to cold cuts (chicken, ham, roast beef etc.) . As a sauce on souvlaki or Gyro sandwiches, or as sauce on breakfast steak, bagels, or on breakfast sandwiches like egg and sausage on an English muffin.
