3 cups peeled diced fresh tomatoes (high acid makes good gravy)
1 med. sweet onion (diced coarsely)
1/2 stick butter
1/4 cup self-rising flour
1/2 cup cool water
Salt and pepper to taste

Directions:
Directions:
Sauté tomatoes, onions in butter; add salt and pepper. Make a smooth slurry from flour and water (be sure there are no lumps or clumps, and all dry flour is thoroughly incorporated). Cook tomatoes until they are well done and fully juiced. Reduce heat to medium. Slowly stir in the flour slurry, and cook about 15 minutes until the gravy is translucent and clear. (To thicken, add more slurry, to thin, add more water. Add salt and pepper to taste.
