For the Orange Cupcakes

• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• 1 ½ teaspoons baking powder
• ½ cup unsalted butter, softened
• 2 large eggs
• ½ cup freshly squeezed orange juice
• 2 tablespoons grated orange zest
• 8 ounces cream cheese, softened

For the Creamsicle Filling

• 2 tsp hot water
• ¼ tsp salt
• 1 (7 oz) jar marshmallow creme
• ½ cup butter or shortening, I used butter
• ⅓ cup powdered sugar
• 1 tsp vanilla extract

For the Buttercream

• 1 cup butter
• 3-3 ½ cups powdered sugar
• 2 tbsp orange zest
• 3 tbsp orange juice
• 1 tsp vanilla

To make the Orange Cupcakes

1. Preheat your oven to 350 F. Line a cupcake pan with liners.
2. In a bowl, whisk flour and baking powder together. Set aside.
3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing until combined. Then mix in orange juice and zest.
4. Gradually fold in the dry ingredients until just combined.
5. Fill cupcake liners two-thirds full and bake for about 20 minutes or until golden brown.

To make the Creamsicle Filling

6. Combine the hot water and salt in a small bowl and stir until dissolved. Set aside to cool completely.
7. In the bowl of a stand mixer, fitted with a paddle attachment, beat together the marshmallow creme and butter until combined. Add in the powdered sugar and vanilla and mix on high speed until fluffy (about 2 minutes). Add the salt solution to the mixture and mix until combined. Transfer filling to a pastry bag fitted with a tip. Set aside.

To make the Orange Buttercream

8. In a stand mixer fitted with the paddle attachment, beat butter until light and fluffy. (About 3-4 minutes).
9. Add orange juice, orange zest, and vanilla. Mix until combined.
10. Next add half of the powdered sugar. Mix until well combined, then add the other half of the powdered sugar, mix until well combined and fluffy, (about 4 minutes).
11. Now core out your cupcakes, being sure not to go all the way thru. Fill to top with the creamsicle filling. Top with your Orange Frosting! Enjoy
