2 large sweet onions thinly sliced
2 lbs of peeled and sliced raw potatoes
3 or 4 fresh tomatoes
olive oil
1 cup freshly grated Parmesan cheese
few leaves of fresh basil
1/2 cup water

Directions:
Directions:
1) slice the potatoes and tomatoes in to thin slices
2) brush generously a large oval baking dish wiht olive oil
3) Arange a layer of onions in the dish, followed by layers of potatoes and tomatoes
4) Pour a little olive oil over the top
5) Sprinkle with Parmesan cheese, add salt and pepper
6) Add basil to the top either whole or broken into pieces
7) Pour the water over the top of the dish
