4 Large red peppers

290g jar of antipasti marinated mushrooms

50g Cous cous

100mls hot vegetable stock

250g Halloumi cheese, cut into cubes

2 tsp chopped fresh parsley

Pre heat oven to fan 180 / gas 6

Cut the peppers in half through the stalks and scoop out the seeds.

Put the peppers open side up on a baking tray.

Drain the mushrooms (reserving the oil) and drizzle 1 tbsp over the peppers.
Season well and bake for 20 minutes until the peppers are softened.

Tip the cous cous into a bowl and add the hot stock. Leave for 5 minutes to soak, then fluffy up with a fork.

Stir in the mushrooms, halloumi and the chopped parsley, season and spoon into the pepper halves.

Return to the oven for 15 minutes, until the cheese is golden.

Serve with a mixed salad and garlic bread.
