• 4 slices of whole-grain or sourdough bread (toasted to your preference)
• 2 ripe avocados, peeled and sliced or mashed
• 4 large eggs
• 1 tablespoon butter or olive oil
• ½ cup cherry tomatoes, halved
• Ό cup red onion, thinly sliced
• 1 teaspoon garlic powder
• Juice of ½ fresh lemon
• Salt and freshly ground black pepper, to taste
• ½ teaspoon smoked paprika
• Fresh herbs (cilantro or parsley), chopped (optional, for garnish)

Toast the slices of bread until they are golden and crisp according to your liking. Set aside on serving plates.

Slice the avocados in half, remove the pits, and scoop the flesh into a bowl. Lightly mash with a fork or slice thinly, depending on your preference. Sprinkle with lemon juice, garlic powder, salt, and pepper, mixing gently to combine flavors.

Crack eggs into a mixing bowl and whisk vigorously until fully combined and frothy. Season with salt and pepper to taste.

Heat butter or olive oil in a non-stick skillet over medium heat. Pour the whisked eggs into the pan, stirring gently with a spatula. Cook until eggs are softly set but still creamy. Remove immediately from heat to avoid overcooking.

Assemble and Garnish
Spread the prepared avocado evenly onto the toasted bread slices.

Spoon generous amounts of scrambled eggs on top of the avocado layer. Add sliced cherry tomatoes and thinly sliced red onions evenly over the eggs. Finish with a sprinkle of smoked paprika and chopped fresh herbs for added freshness and vibrant color.
