Ingredients for the Chunky Monkey Pancakes
1 ripe banana (mashed)
2 cups buttermilk
2 eggs
4 tablespoons butter (melted)
1 teaspoon vanilla
2 ¼ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
4 tablespoons sugar
1 cup chocolate chips

Ingredients for the Chunky Monkey Sauce
2 bananas (ripe and mashed)
2-4 tablespoons peanut butter (to taste)
¼ - ⅓ cup whole milk

Instructions for the Chunky Monkey Pancakes
1. Preheat griddle to 350º degrees.

2. In a medium bowl add buttermilk, vanilla, and melted butter.

3. In a large bowl, whisk together flour, salt, soda, baking powder, and sugar.

4. Make a well in the dry ingredients.

5. Add in the wet ingredients plus the 2 eggs, whisk together just until combined.

6. Stir in mashed banana.

7. Use nonstick spray on griddle.

8. Pour ⅓ cup batter onto griddle to form 1 pancake, sprinkle 1 to 10 chips on top.

9. Continue pouring pancake batter onto griddle until full leaving 1-inch space in between.

10. Once bubbles form on top, flip pancakes.

11. Continue cooking until pancakes are browned and cooked through on both sides.

12. Serve warm with chunky monkey sauce or maple syrup.

Instructions for the Chunky Monkey Sauce
1. In a medium bowl, mash the bananas until there are no lumps.

2. Stir in the peanut butter.

3. Add the milk, a tablespoon at a time, stirring in between each add in until the sauce is the thickness you prefer.

4. Serve with Chunky Monkey Pancakes.
