3 1/2 cup flour
1 cup sugar
1 1/3 tsp baking powder
6 eggs
1/2 lb almonds (coarse ground)
1/4 lb butter
1/4 tsb salt
1 tsp vanilla
1 tsp almond extract (optional)

In a large mixing bowl add butter, eggs, sugar, with the stand mixer set at medium beat ingredients until fluffy.

Reduce mixer speed to low, add flour about 1/2 cup at a time making sure it is mixed before adding more flour, add salt, baking powder, vanilla (I also add almond flavoring), chopped almonds. Blend completely.. The dough should be sticky.

The recipe will make 2 loafs. Divide dough in half and make one loaf on a baking. Form the loaf so that its 1 inch thick. Form the second loaf on another baking sheet

Bake in oven at 350 degrees for 25 minutes, test loaf with a toothpick inserted to center , if it comes out clean the loaf is done.

Remove from oven, Slice the loaf into 1 inch wide slices. Arrange slices on bake sheet and place them bake into the oven for about `0 minutes until lightly brown.

Helpful hint
If you coat your hands with flour it makes it easier to for you to form the loaf. also a light coating of flour on baking sheet makes working with the dough a little easier.

You can also garnish the cookies with powdered sugar before serving. You can also dip one end of the Biscotti in chocolate
