4 C old-fashioned rolled oats
1 1/2 C raw nuts
1 tsp salt
1 tsp cinnamon
1/2 C coconut oil
1/2 C maple syrup or honey
1 tsp vanilla
1 cup coconut, optional
2/3 C dried fruit, cranberries, raisins or apricots, chopped

Preheat oven to 350 degrees. Line a large rimmed baking sheet with parchment paper.

In large bowl. Combine oats, nuts, salt and cinnamon. Stir to blend. Add oil, syrup and vanilla. Mix well! Pour granola onto your pan and spread it out in an even layer. Bake for 20-25 minutes stirring halfway, pressing it down with a spatula until it is golden brown. Granola will crisp up as it cools. Let it cool completely WITHOUT stirring for 45 minutes. Add the dried fruit. Break the granola around with a spoon. Store in an airtight container

If adding coconut, stir it in at the half-way mark so it doesn't burn.
