1 Loaf of Italian bread

Dice/cube the loaf of Italian bread into small crouton sizes.

Put diced bread into a large bowl and then sprinkle spices in a little at a time and mix together. Taste test to see what you think it needs more of. (Brendan definitely uses more granulated garlic and oregano than the other spices!) Add a good drizzle of olive oil in the bowl, so ingredients stick to the bread. Mix well. Taste one last time and add anything else needed. Brendan suggests eating a few at this stage!!

Spread the seasoned bread onto a baking sheet and cook in the oven at 359 degrees for approx 12 mins. Check on them - if not golden brown and crunchy, bake again at 2min intervals. Shouldn’t be squishy. They turn fast — so be sure to not accidentally burn them!

When done cooling, line tray or bowl with paper towels. Layer croutons, top with paper towels and cover. Let them sit a while to soak out any excess oil. Store in zip lock bag or covered container.

Serve over salad…or just eat the croutons as a snack, like Brendan does!
