2x fresh salmon ~200g each (Atlantic is great)
1x medium tomato, diced
2x garlic cloves, chopped
1/4c capers
1/4c black olives
handful of parsley, chopped
2 Tbsp extra virgin olive oil
Fresh rosemary (optional)
Salt & pepper to taste

MAKE IT A MEAL:
Serve with salad, rice, roasted veggies, or roasted potatoes.

In a mixing bowl, add the dice tomato capers, garlic, parsley, black olives, extra virgin olive oil, salt and black pepper. Mix and put aside.
Place a small size frying pan over medium heat, bring to temperature and add olive oil.
Season the salmon with salt and black pepper both sides.
Pan fry for 3 minutes on one side, then add the olive-tomato mixture, flip the salmon and cook another 3 minutes on the other side, stirring the olive-tomato mixture as it cooks.
When done, remove the salmon from heat.
Place the salmon on the serving plate and top with the cooked olive-tomato mixture.
Serve immediately. Optional: add more olive oil.
The salmon should be glistening when cut, moist, and falls apart in your mouth.

I’m not much of a fish person, but holy cow, this dish has me converted! The capers/olives really cut the fish-taste. Its so good, I could eat this weekly!! Of course, Devon’s happy about that cos he LOVES fish! Haha! This is from another YEG Cooking Class by Sorrentino’s: Date Night: Sea of Love!
