2 cups sugar
1/4 cup cocoa powder
1/2 cup milk
1/2 cup butter (1 stick)
1-2 teaspoons vanilla
1/8 teaspoon salt (a pinch)
1/8 teaspoon cinnamon (optional) *I think it give it a Mexican hot chocolate flavor, yum!)
1/2 cup Peanut butter
3 cups of quick oats

Directions:
Directions:
Mix together sugar, cocoa, milk and butter in a saucepan and bring to a boil. Boil for one minute, then remove from heat.

Stir in the peanut butter, vanilla and cinnamon (if using) and mix until incorporated.

Add the oats and mix well.

Working quickly, drop by tablespoon onto a baking sheet lined with wax paper or parchment paper. If desired flatten the mounds slightly with a spoon. Let the cookies cool and set completely.
