4 - 5 large green bell peppers
1 tablespoon olive oil
1 small onion chopped
1 clove garlic, minced
1/2 lb Mexican chorizo
1/2 lb lean ground beef

1 cup cooked rice
1 egg beaten
1 can diced green chiles, drained
1 package taco seasoning
1/2 cup tomato sauce
1/2 cup taco or enchilada sauce

1 1/2 cups shredded cheese (cheddar, monterey jack, mexican blend, etc.)
Mexican queso blanco liquid cheese or cheese dip

Preheat oven to 400 degrees

Cut green peppers in half and cut out seeds and insides.

Add olive oil to pan and heat slightly. Add onions and garlic and cook until translucent being careful not to burn garlic. Add chorizo and ground beef and brown. Do not drain.

In a large bowl add the meat mixture and all remaining ingredients. Mix well until all of the ingredients are combined.

Put the peppers in a casserole dish (9X13) that has been sprayed with cooking spray. Then, stuff the peppers with the meat and rice mixture. Be sure to mound the mixture in the peppers.

Pour a couple of tablespoons of liquid queso blanco onto each mound and sprinkle to cover with cheese.

Cover with foil and Bake 30 - 35 minutes. Uncover, drizzle with queso blanco and remaining cheese and bake an additional 10 minutes or until cheese is melted.
