1 1/2 cup buttermilk or soured milk

1 Tsp baking soda

1 3/4 cups flour

2 Tsp baking powder

1/2 Tsp salt

1/2 cup soft shortening (fresh bacon fat is good)

Heat waffle iron while mixing batter. If no automatic heat control, test by sprinkling grids with drops of water. If water skitters around before evaporating, iron is just right.

Beat eggs well. Measure flour. Beat in remaining ingredients with rotary beater until smooth. Pour from cup or pitcher onto center of hot waffle iron. spread to cover surface. Do not keep iron open longer than necessary. Bake until steaming stops. Lift carefully with fork. Serve hot with butter and syrup.
