¾ cups bacon bits cooked (optional)
butter
onion chopped
red or green pepper chopped
Herbs (thyme oregano)


7 large eggs
1 c cottage cheese
1 c jack or mozzarella cheese shredded
¼ tsp salt
dash of garlic powder
¼ tsp black pepper pepper
cooking oil spray

Directions:
Directions:
Preheat oven to 325℉.
Spray a 12 cup muffin pan with cooking oil.
Chop cooked bacon. Chop onion and pepper. Mince herbs. Melt a bit of butter in small frying pan and sauté onion, pepper, herbs. Add bacon when vegetables are starting to soften.
In a medium sized mixing bowl, crack and whisk eggs.
Add in cottage cheese, shredded cheese, salt, garlic powder and pepper. Mix to combine.

Equally distribute the egg mixture among the 12 muffin cups.
Place a pan in another pan with hot tap water covering the bottoms only of the muffin tin.
Place the egg bites in the middle of the oven and bake 25-30 minutes.
Use a toothpick to check for doneness. Toothpick should come out of the egg bite clean.
take muffin in out of water pan and let the egg bites cool for 5 minutes. Store egg bites in the refrigerator for 3 days or freeze.
