2 lbs boneless skinless chicken breast
8-10 slices of mozzarella cheese
5-6 grape tomatoes halved
2 tsp Italian seasoning
Salt and pepper to taste
2 tsp olive oil

Directions:
Directions:
Preheat oven to 400. Place chicken on cutting board and using a sharp knife cut slits across the breast about ¾ of the way through be careful to not cut all the way through. You will get about 6-8 slits depending on the size of the breast. They should look like an accordion when done. Now take a slice of mozzarella and ½ a grape tomato and add to each slit once each breast is complete add to baking dish that has been coated with oil or cooking spray. Sprinkle salt and pepper, and Italian seasoning to each one. Place chicken in preheated oven cooking for 30 minutes or until internal temp reaches 165. Remove from oven let rest for 5 minutes and serve.
