8 large eggs
1 cup SCD yogurt
1 cup chopped spinach
3-4 pieces of bacon, cooked and diced
1/2 cup cheddar cheese shredded
1/2 tsp salt
1/4 tsp pepper

avocado oil
12 count muffin tin

Directions:
Directions:
Preheat oven to 350 degrees.

Prepare the muffin tin, grease each cup with avocado oil.

Beat the eggs and yogurt together. Add in spinach, bacon, cheese, salt and pepper and mix. Spoon equal amounts of egg mixture into 12 muffins.

Bake 25-30 minutes until tops are golden and eggs are cooked through.

Once cooled, run a knife around each muffin, remove from tin and place in airtight container. Keep in fridge up to 7 days.
