* 1 {9"] pastry crust,prebaked
* 2 TBSP. each butter,chopped celery,chopped onion,chopped shallot,parsley & sherry
* 1 1/2 cups crabmeat
* 4 lightly beaten eggs
* 1 cup each milk & heavy cream
* 1/2 tsp. salt
* 1/4 tsp. each nutmeg & pepper

*Heat oven to 375.
*Melt the butter in a medium saute pan & cook the onions,shallot & celery 'til soft.*Add the crabmeat & cook over high heat 'til the liquid is evaporated.*Add the parsley & the sherry.*Spread this mixture into the prebaked pie shell.*Combine the rest of the ingredients & gently pour over the crab mixture.*Bake for 45 minutes or 'til a knife comes out clean {test 1" from the center}.*Cut into wedges & serve immediately.
