2 T. LIGHT CREAM
1 T. SORREL
1 T. SAFFLOWER OIL
4 PIECES DICED BACON SLICES
1/3 C. COLD, SLICED, BOILED POTATOES
1/3 C. GRATED MED. CHEDDAR

BEAT THE EGGS WITH THE CREAM AND SORREL. HEAT OIL IN A SKILLET, ADD THE BACON AND FRY UNTIL CRISP. REMOVE BACON AND RESERVE THE FAT. FRY THE POTATOES IN THE FAT UNTIL GOLDEN BROWN. FOLD IN THE EGG MIXTURE. SPRINKLE WITH BACON. COOK ON ONE SIDE UNTIL OMELET IS SET, TURN OVER AND COMPLETE COOKING. SPRINKLE WITH CHEESE AND BROIL FOR 1 MINUTE.
