1 cup vegetable oil
2 eggs
2 cups sugar
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
3 cups sour apples, peeled and chopped
6 oz. butterscotch chips
1 cup pecans (optional)

Directions:
Directions:
In a large bowl, mix well oil, eggs and sugar. Sift together dry ingredients. Add to mixture., stir in nuts and chopped apples, mix well. Spread mixture in greased 13X9 pan. Distribute butterscotch chips on top of cake. Bake at 350º for 55 - 60 min. Cool and cut into squares. For best results, bake one day before serving
