4 pounds corned beef brisket
1 tbsp whole mixed pickling spice
1 stalk celery
1 onion
1 carrot
1/3 c packed brown sugar
1 tbsp prepared mustard
1/2 c sweet pickle liquid or fruit juice.

Directions:
Wash beef and put in large kettle. Cover with cold water. Add next 4 ingredients. Bring to boil, cover and simmer 4 to 4 1/2 hours, or until tender. Cool beef in the broth, then put in shallow roasting pan and score fat layer. Mix brown sugar and mustard and pat on beef. Pour pickle liquid into pan. Bake in slow oven 300º 1 hour, basting several times with some of the drippings in the pan. Serve hot or cold.
