4 - 6 oz. boneless, skinless chicken breast halves
4 tbl. olive oil
2 medium onions, thinly sliced
2 tbl. fresh thyme leaves
2 tbl. honey
3 lg. garlic cloves
1/2 c. apple cider vinegar
2 c. chicken stock

Directions:
Preheat a large skillet over medium high heat. Add 3 tbl. olive oil. Season chicken with salt and pepper and add to the skillet. Brown the chicken on both sides, 3 minutes per side. Remove the chicken from the pan and set aside, covered with foil.

Add another tbl. of the olive oil to the pan, add the onions, thyme, honey, and the garlic. Cook, stirring frequently for 7 to 8 minutes. You want the onions to get really brown and caramelized. Add 1/2 c. of the cidar vinegar and the chicken stock. Bring the liquids to a simmer and return the chicken to the skillet. Cook the chicken in the sauce for about 10 minutes, flipping the chicken over halfway through the cooking time. Serve.
