2 T. butter
2 T. minced shallot
1/2 lb. mushrooms (sliced thick)
1/3 C. dry sherry
1 C. beef stock
salt and pepper

Heat butter until foamy. Add shallot and stir until wilted. Add mushrooms. Stir until they release juice. Add sherry and cook for 1 minute. Add beef stock and cook until thick and dry.
